Blueberry
Dessert
Ingredients:
| Crust: 1 cup crushed graham crackers ½ cup crushed pecans ½ cup sugar ½ cup butter, melted | Filling: 8 oz. Shepherds Dairy soft chevre’ cheese, beaten 2 eggs ½ cup sugar 2 cups blueberries or 1 can blueberry pie filling |
Mix crust ingredients together and press into the bottom of a 9 x 9" pan.
Filling:
Mix all of the filling ingredients and beat well. Filling should be smooth in consistency. Pour over graham crust.
Bake at 325 degrees for 20 minutes or until hints of light brown start to appear. Cool and top with fresh blueberries or 1 can blueberry pie filling. Top with fresh whipped cream. For variation add fresh sliced peaches with fresh blueberries.
I also sometimes will thaw out some frozen mixed berries, which work just as well.
